I actually finally learned how to do this at 42 years of age, and I was so happy. Problem is now I can’t tell a normal sheet from a fitted sheet when they’re folded.
I believe fitted sheets have the elastic to fit around a mattress, while a normal sheet does not have the elastic and typically goes between you and the comforter.

… fitted sheets aren’t the normal ones?

Sheets without an elastic seem impractical to me.
In my culture we use fitted sheets on the bottom and normal sheets stay between you and the blankets or other covers.
I’ve noticed when travelling this is not how it’s done in some places though where there’s nothing separating you from the covers or duvet.
